We often have baked potatoes for a side with dinner. They don't all always get eaten. We hate throwing away food... The result of too many baked potatoes this weekend turned into an amazing side dish or appetizer that was pretty easy to put together and enjoyed by all.

What you need:
- Whole baked potatoes (or whole potatoes to bake)
- Shredded cheddar cheese (or any of your favorite shredded cheeses)
- Crispy bacon, chopped
- Oil
- Salt
- Pepper
- Any other seasonings you'd like such as ranch, garlic powder, etc.
- Optional dips and toppings: sour cream, salsa, chopped green onions, ranch
What you do:
- If your potatoes are not already baked, bake them. We like to wrap ours in foil and cook in the air fryer.
- Slice the potatoes into quarters. Count the wedges.
- On a baking sheet, sprinkle some bacon into small piles. You need as many piles as the number of wedges.
- Sprinkle shredded cheese on top of the bacon.
- Put the potato wedges on top of the bacon and cheese, skin side up.
- Brush the potato skin with some oil and season with salt and pepper.
- Bake at 400' for 10 to 15 minutes.
- Once the cheese has melted and the skins have crisped some, pull them out and let them cool for about 10 minutes.
- Serve with optional dips and/or toppings and enjoy!
