We eat a lot of chicken so we like trying something different now and then. I saw a recipe for a casserole that had chicken with crushed up round snack crackers so thought we could work with that for something new to try. End result?? So yummy!

What you need:
For the chicken:
- 4 boneless, skinless chicken breasts
- 3 cups shredded cheddar cheese (we grate our own so I used the smallest blade option for finer cheese)
- 1/2 cup milk
- 2 sleeves of round snack crackers (crushed)
- 1/4 tsp salt
- 1/8 tsp pepper
For the sauce:
- 14 oz can cream of chicken soup
- 2 Tbsp butter
- 2 Tbsp sour cream
What you do:
- Cut chicken breasts into smaller pieces.
- Crush (or use a food processor to grind up) the crackers
- Mix the crackers, cheese, salt, and pepper, and add to a small dish.
- Pour the milk into a small dish.
- Dip each piece of chicken into the milk and then the cracker/cheese mixture, and add to a 9x13 pan (with cooking spray).
- Cover pan with foil and bake at 400' for 35 minutes. Remove the foil and bake for another 10 minutes or until edges of chicken are golden brown and crispy.
- During the last 10 minutes of cooking, prepare the sauce. In a medium-sized saucepan, combine the cream of chicken soup, sour cream, and butter. Stir over medium heat until well mixed and hot.
- Serve the chicken with the sauce over the top. The chicken goes great with mashed potatoes!
